Cheesecake with cherries

This Cherry Cheesecake is one of the easiest cheesecake recipes to make. No cakes and no oven. All you need for this cheesecake is a refrigerator, quality products and large, fleshy cherries - always pitted. You only have to cook it once, and you'll be so engrossed that you'll be able to come up with variations on the theme of cold cherry cheesecake.

Ingredients

Servings 6 servings
  • 300 g pitted cherries, plus for serving
  • 2 strips or 8 g gelatin powder
  • sugar - 50 g
  • 100 ml cherry vodka "Kirsh"
  • 400 g Philadelphia cheese
  • 200 g cream with a fat content of 30%

Cooking

Step 1

If you are making the cherry cheesecake with fresh berries, rinse them under running water, pat dry with paper towels, and go straight to step 2. If using frozen, thaw the cherries and drain in a sieve to remove excess juice. Then dry the cherries with paper towels.

Step 2

Soak gelatin in 4 tbsp. l. drinking water for 10 min.

Step 3

In a heavy bottomed pan, add 1 tbsp. l. sugar, add 4 tbsp. l. tablespoons of water and stir. On the lowest heat, completely dissolve the sugar.

Step 4

Add cherries and vodka. Cook, stirring, 2-3 minutes. Please note that this cheesecake with cherries, if you used vodka, is not recommended for children and people for whom alcohol is contraindicated. He will not have time to evaporate and remain in the dessert!

Step 5

Cheese, preferably at room temperature, put in a bowl and beat with a whisk or mixer at the lowest speed, 5 minutes.

Step 6

Whip cream with 2 tbsp. l. Sahara. Add to cheese and stir until smooth.

Step 7

In a small heavy-bottomed saucepan, heat the gelatin, stirring, until completely dissolved. Mix with cheese mass.

Step 8

Line a rectangular or square deep cake tin approximately A5 or with a side of 25 cm (or a frame) with cling film and fill with half of the prepared cheese mass.

Step 9

Place the mold in the refrigerator for 30 minutes. The mass should harden a little. Remove from the refrigerator and arrange the cherries in a single layer on top of it.

Step 10

Put the remaining cheese mass on top, level the surface with a silicone spatula. Place the mold back in the refrigerator for at least 2 hours.

Step 11

Take out the finished cheesecake, holding on to the free ends of the cling film. Take it off and put it on a platter. Serve immediately, garnished with cherries.
