This Cherry Cheesecake is one of the easiest cheesecake recipes to make. No cakes and no oven. All you need for this cheesecake is a refrigerator, quality products and large, fleshy cherries - always pitted. You only have to cook it once, and you'll be so engrossed that you'll be able to come up with variations on the theme of cold cherry cheesecake.

How to cook Cheesecake with cherries

Step 1

If you are making the cherry cheesecake with fresh berries, rinse them under running water, pat dry with paper towels, and go straight to step 2. If using frozen, thaw the cherries and drain in a sieve to remove excess juice. Then dry the cherries with paper towels.

Place the mold in the refrigerator for 30 minutes. The mass should harden a little. Remove from the refrigerator and arrange the cherries in a single layer on top of it.

Put the remaining cheese mass on top, level the surface with a silicone spatula. Place the mold back in the refrigerator for at least 2 hours.

Take out the finished cheesecake, holding on to the free ends of the cling film. Take it off and put it on a platter. Serve immediately, garnished with cherries.
