Step 1

Peel the zucchini and cut into very thin circles. Rinse orange, dry. With a sharp knife, cut off about 1/3 of the zest and simmer it in a saucepan over low heat in butter for 2 minutes, then remove the zest. Squeeze orange juice into a bowl with oil and boil a little. Season with salt and pepper. Add zucchini and sauté over low heat for 3 minutes. Remove from heat, pour in brandy, set aside. Grease 4 sheets of parchment paper with oil. Spread over them in one layer half of the zucchini in the sauce. Put fish pieces on zucchini mugs, salt. Top with the rest of the zucchini. Wrap the paper tightly in the form of a bag. Preheat the oven to 200ºС. Put the fish in parchment on a baking sheet and bake for 15 minutes. Serve unrolled and garnish with greens. TIP You can also use other fish such as cod or haddock for this dish.
