Bone broth

Cookinero 23 Feb 2025

It's unbelievable, but true: bone broth is an absolute hit in the healthy menu. The reason is its high content of minerals, amino acids, collagen and gelatin. In addition, bone broths improve the quality of sleep and brain function. So it's time to put aside avocado and other superfoods and cook a rich broth. The cooking process is long, but it does not require much effort.

How to cook Bone broth

Step 1

Bone broth

Place the vegetables, cut into large pieces, and the bones in the oven for 10-15 minutes. The products should be well browned.

Step 2

Bone broth

Place the bones in a saucepan, cover with cold water, add salt and set over medium heat. When the broth starts to boil, skim off the foam with a slotted spoon and reduce the heat to almost minimum. Cover the saucepan with a lid, leaving a gap for steam to escape.

Step 3

Bone broth

After 2 hours, add vegetables and parsley root. Cover the pan with broth and leave to simmer for another 1 hour. Then add pepper, bay leaf and remove from heat. Let the broth steep for 15-20 minutes.

Step 4

Strain the finished broth through a fine sieve and use.

Bone broth - FAQ About Ingredients, Baking Time and Storage

Yes, you can use frozen bones, but it's best to roast them first (as in Step 1) to enhance flavor, even if they're thawed or partially frozen.
You can use parsnips, celery root, or an extra carrot as a substitute for parsley root to maintain a similar earthy flavor profile.
Store cooled bone broth in an airtight container in the fridge for up to 5 days. For longer storage, freeze it.
For a vegetarian version, use hearty vegetables like mushrooms, onions, and carrots, and simmer with seaweed or miso for depth, skipping the bones entirely.
Absolutely! After roasting bones and veggies (Step 1), add them to a slow cooker with water and cook on low for 24 hours for a richer broth.
Avoid boiling too vigorously; a gentle simmer (as in Step 2) and skimming foam early helps keep the broth clear.
Freeze in smaller portions using ice cube trays or 1-cup containers for easy use. Leave 1-inch headspace for expansion.
Yes! Thyme, rosemary, or sage pair well, but add them in the last 30 minutes to avoid bitterness.
Reduce higher-carb veggies (like carrots) and focus on celery, onions, and herbs. The bones provide most of the flavor without carbs.
Use it as a base for soups, stews, or risotto, or sip it plain for a nourishing drink. It adds depth to sauces and gravies too.
