Zucchini fritters with warm salsa
A very easy to prepare truly summer dish literally "from the garden" :)
Ingredients
Servings 3- zucchini 2 pcs.
- sweet pepper 2 pcs.
- large pink tomato 1 pc.
- 3 cloves of garlic
- onion 1 pc.
- extra virgin olive oil 1 tsp.
- cream 100 ml
- soy sauce
- 1 sprig fresh thyme
- egg 1 pc.
- flour 3 tbsp. l.
- salt to taste
- dill, parsley
- vegetable oil for frying
Cooking
Step 1
Pepper, onion, 2 cloves of garlic (as is, do not peel) put in a baking bag, drizzle with olive oil, add a small sprig of thyme and bake until soft. Peppers, garlic and onions cool a little, peel, put in a blender bowl, add coarsely chopped tomato, salt, a couple of parsley sprigs, chop at low speed.
Step 2
Grate a clove of garlic on a fine grater, add to sour cream, pour in soy sauce (to taste), mix until a uniform color, put in the refrigerator.
Step 3
Zucchini grate on a coarse grater, add the egg, chopped dill, salt, beat with a fork, add flour, stir so that there are no lumps. Heat vegetable oil in a frying pan, fry the pancakes.
Step 4
Lay pancakes in portions on warmed plates, pour over with sour cream sauce, add salsa, garnish with herbs and watch with tenderness how fast breakfast disappears =)
