Light salad with avocado and poached egg

This popular salad with avocado and poached egg is served with Baku tomatoes and spicy arugula - it turns out simple, easy and nutritious in a summer way.

Ingredients

  • 400 g Baku tomatoes
  • 400 g avocado
  • 60 g arugula
  • 8 g of salt
  • 4 g ground black pepper
  • 160 ml extra virgin olive oil
  • 20 g cilantro
  • 8 eggs

Cooking

Step 1

Cut the tomatoes into large cubes. Cut the avocado in half, remove the pit. Cut the pulp into small cubes. Mix prepared ingredients.

Step 2

Add arugula, salt, pepper, olive oil and finely chopped cilantro, stir and arrange on a plate.

Step 3

Prepare poached eggs.

Step 4

Lay the egg on the salad. Serve.
