Herring without a fur coat

Ingredients

  • red pickled onion - 20 g
  • sweet apple - 10 g
  • egg yolk - 1 pc.
  • pickled cauliflower or other vegetables - 20 g
  • herring - 70 g
  • mashed potatoes - 120 g
  • sauce Demiglas - 50 g
  • beets - 30 g
  • fresh cilantro - 30 g
  • salt and pepper to taste

Cooking

Step 1

Take warm mashed potatoes and put it in a deep plate in a slide.

Step 2

Pour demi-glace sauce over the side of the plate, put the herring fillet on top.

Step 3

Gently stick a piece of apple into the center of the composition, lay out the beets, pickled vegetables and red onions. Decorate with cilantro.
