Herring without a fur coat
Ingredients
Servings 1- red pickled onion - 20 g
- sweet apple - 10 g
- egg yolk - 1 pc.
- pickled cauliflower or other vegetables - 20 g
- herring - 70 g
- mashed potatoes - 120 g
- sauce Demiglas - 50 g
- beets - 30 g
- fresh cilantro - 30 g
- salt and pepper to taste
Cooking
Step 1
Take warm mashed potatoes and put it in a deep plate in a slide.
Step 2
Pour demi-glace sauce over the side of the plate, put the herring fillet on top.
Step 3
Gently stick a piece of apple into the center of the composition, lay out the beets, pickled vegetables and red onions. Decorate with cilantro.
