Baked vegetable salad
Delicious salad based on oriental cuisine with spicy honey and coriander dressing.
Ingredients
Servings 4- eggplant 4 pcs.
- tomato 2 pcs.
- sweet pepper 3 pcs.
- garlic 3 pcs.
- green onion 1 pc.
- coriander 1 tsp. l.
- olive oil 5 tbsp. l.
- lemon juice 4 tbsp. l.
- honey 1 tbsp. l.
- salt 1 pinch
- pepper 1 pinch
Cooking
Step 1
Eggplants, sweet peppers and tomatoes wash and prick with a fork. Bake in the oven at 190 degrees for 40-50 minutes (depending on the size of the vegetables).
Step 2
Remove the skin from the eggplant and tomatoes. Wrap the peppers in a bag for 10-15 minutes. "sweat", then they are easier to clean. Cut all the vegetables into strips when cool.
Step 3
Let's prepare a dressing from olive oil, honey, lemon juice, garlic (through a press), salt and pepper.
Step 4
Pour the dressing over the vegetables, sprinkle with chopped herbs, mix and leave in the refrigerator for at least 30-50 minutes. The longer it sits, the tastier it becomes!
