Spicy carrot salad with mint

Spicy carrot salad with mint - a dish from the series "A storehouse of vitamins". This salad is not only tasty, but also very healthy. Pickle carrots in the evening and you will have an amazing light breakfast in the morning. And if you find the strength in yourself and do not eat everything at once, then by dinner the salad will become even tastier.
How to cook Spicy carrot salad with mint
Step 1
Finely chop the onion, parsley and mint.
Step 2
In a wide bowl, prepare the marinade by mixing the onion, parsley, mint, mustard, lemon juice and salt.
Step 3
Grate carrots on a coarse grater or cut into very thin long strips.
Step 4
Mix marinade with carrots, add olive oil.
Step 5
Cover the bowl with cling film and leave in the refrigerator for 30 minutes.
Step 6
Then taste and add lemon juice and oil to taste.
Step 7
Leave in the refrigerator for 8-10 hours or even for a couple of days, the salad will only taste better.
Step 8
Season with freshly ground black pepper before serving.
