Oxtail soup

How to cook Oxtail soup

Step 1

Put the oxtail, cut into 5-6 pieces, into the pan. Pour 2.5 liters of cold water, bring to a boil and reduce the heat to a minimum. Remove the foam, add salt, carrots and onions cut in half, cook under the lid for 2 hours.

Step 2

In the meantime, shred the cabbage very thinly, removing the stalk. Finely chop 2 small carrots and 1 large onion. Saute carrots and onions in vegetable oil for 10 minutes.

Step 3

Strain the broth, removing the boiled onions and carrots. Remove the meat from the bone in small pieces. Put the fried onions and carrots in the broth, bring to a boil, cook for 5 minutes.

Step 4

Add cabbage and meat, cook for 10 minutes. Finely chop a bunch of herbs (dill, parsley, cilantro) with garlic cloves, add to cabbage soup, salt. Turn off the heat, let it brew under the lid for 15 minutes.
