Moroccan marinade for beef, lamb and seafood

Step 1

Rub the garlic in a mortar with sugar or finely chop or grate on a fine grater. Mix with the rest of the ingredients and whisk until emulsified. Mix with prepared meat or seafood.

1/3 cup olive oil
1 st. l. ground cardamom
1 Art. l. milled zira
1.5 st. l. ground allspice
​ 3 garlic cloves
1 h. l. year
juice of half a lemon
