Grilled Turkey Fillet with Gremolata
Behind the unknown to many, the word Gremolata hides a popular Italian seasoning made from garlic, parsley and lemon zest. This tastes good to us too - not only to Italians, so we cook the turkey according to this recipe with great pleasure.
How to cook Grilled Turkey Fillet with Gremolata
Step 1
Arrange the patties in a single layer on a tray, season with salt and pepper on one side, flip and season on the other. Mix olive oil with wine, pour cutlets. Cover the tray with foil and leave on the table for 2 hours. During this time, turn the patties several times.
Step 2
While the turkey marinates, prepare the gremolata. Remove the zest from the lemon and orange with a paring knife. Place in a saucepan, cover with cold water and bring to a boil. Discard the zest in a colander, cool under cold water, cut into pieces. Strip the parsley leaves. Put the zest, garlic, parsley leaves into the blender bowl and pulse. Mix with cheese and olive oil. Stir in lemon and orange juice to taste.
Step 3
Light the coals, set the grate and heat it well. Lubricate with vegetable oil. Place burgers on the grill and grill for 5-8 minutes on each side, depending on the heat of the coals. Serve immediately, seasoned with gremolata.
