Such a kebab is really fried on the grill in a few minutes, and marinating meat, if you can call it the process of soaking ghee, will take only about an hour. During this time, you will have time to light the coals and cook salsa - a delicious addition to barbecue. However, you should know that not every beef is suitable for such a dish: tenderloin, shoulder blade or rump are ideal. And, of course, we are talking exclusively about chilled meat! If you do everything right, then such a quick beef skewers will also be the most delicious.
Cooking
Step 1
Bring melted butter to room temperature. Remove all membranes from beef. Cut the meat horizontally lengthwise into 2 layers, then each of them - in half vertically, and then across into pieces of 3.5-4 cm.
Step 2
Rub all the pieces of beef with salt and ground pepper, and then with melted butter, gently rubbing it into the flesh. Cover with cling film and let the meat rest for 30-60 minutes.
Step 3
For the salsa, peel the onion and chile and chop finely. Grate the zest from the lime, squeeze out the juice, mix the juice and zest with olive oil, onion and chili, salt. Cut the tomatoes into small cubes, add to the onion and chili, pepper, cover and let stand while everything else is cooked.
Step 4
Light the coals in the grill - they should burn well and turn into white ash. Sweet pepper cut into squares with a side of 3 cm, peeling from partitions and seeds. Thread beef and pepper onto skewers, alternating pieces (meat should be strung lengthwise).
Step 5
Grill skewers over charcoal, turning frequently, 4 minutes. Remove, let lie on a dish for 10 minutes. Grill for another 3-6 minutes, until desired doneness. Let rest 5 minutes before serving. Serve with salsa.
