Cold zucchini soup with pistachios
In hot weather, there is nothing better than a bowl of cold soup. And if you are already fed up with the traditional okroshka and holodnik, try our version of zucchini. The taste will pleasantly surprise you.
How to cook Cold zucchini soup with pistachios
Step 1
If the skin of the zucchini is thick, remove it. Cut the zucchini in half and remove the seeds. Cut the zucchini into pieces.
Step 2
Put zucchini, pistachios, spinach, peeled onions and garlic, basil leaves in a blender bowl. Grind into a smooth puree. Pour in the cream and lemon juice, season with salt and pepper. If the soup is too thick, add some cold water. Stir the soup and place in the freezer for 15 minutes.
Step 3
Ladle soup into bowls, top with arugula, basil leaves and sprinkle with chopped pistachios. Garnish with cream and drizzle with olive oil.
