Soup with zucchini and bulgur
Soup with fried beef and summer vegetables.
Ingredients
Servings 6- olive oil 2 tbsp. l.
- beef pulp 300 g
- rosemary 1 sprig
- onion 2 pcs.
- bulgur 100 g
- medium zucchini 1 pc.
- peas 100 g
- pesto for serving (optional)
- celery 2
Cooking
Step 1
Cut the meat into slices, zucchini into cubes, finely chop the onion. Heat the oil in a frying pan, fry the meat until golden brown.
Step 2
Transfer the meat to a saucepan, pour 1.5-2 liters of hot broth (water), add rosemary, bring to a boil, reduce heat to a minimum, cook for 1 hour.
Step 3
Add onion, celery to the pot. After 10 minutes, add bulgur and zucchini. After 5 minutes add peas. Boil 5 minutes. Season to taste. Can be served with pesto sauce. Bon appetit!
