Salad with celery root and chicken

A salad with celery root and chicken may even seem exotic to some, since we add one of its ingredients to soups at best. Which one? Celery, of course! Moreover, "tops", that is, its green stems, are used for salads quite often, but the "roots" are somehow ignored. And very in vain, because they have a pleasant, sweetish taste and rich aroma. Try, for example, once, to make a puree of celery root and potatoes (in a ratio of 1: 1), and you will be simply fascinated. Well, you can start your acquaintance with this root crop just from our salad. Tender chicken, pickles, spicy celery... Hearty, fragrant, very tasty!

Ingredients

Servings 4 servings
  • chicken fillet - 600 g
  • pickles - 250 g
  • celery root - 250 g
  • delicious rye bread - 300 g
  • mayonnaise (preferably homemade) - 4-5 tbsp. l.
  • vegetable oil - 2 tbsp. l.

Cooking

Step 1

Prepare salad ingredients. Wash the chicken fillet and place in a saucepan. Pour in cold water and bring to a boil. Remove the foam with a slotted spoon and salt a little. Cook over low heat under a loose lid for 30 minutes.

Step 2

Remove the chicken from the broth, let cool and then cut into strips. Also chop pickled cucumbers. Peel and wash the celery root. Cut into thin strips. Place in a colander and plunge into boiling salted water for 3 minutes.

Step 3

Bread for salad cut into cubes and fry in vegetable oil until golden brown. (2-3 minutes). Stir in chicken, cucumbers and celery. Dress the salad with mayonnaise. Serve cooked rye crackers separately.
