Pork medallions with kiwi

Do you know how one of the Celtic names for paradise is literally translated? A place with a lot of fried pork. There is always one pig alive, and the other is already roasting. As it is easy to guess, in paradise they will not feed tasteless. And if in real life you add kiwi to pork, you get a great company worthy of a homemade lunch or dinner - juicy, harmonious and not banal.

Ingredients

Servings 4
  • 4 pork fillets, 150 g each
  • 3 shallots
  • 5 kiwi fruits
  • 40 g butter
  • 200 ml cream with a fat content of at least 30%
  • salt, freshly ground black pepper

Cooking

Step 1

Salt and pepper the meat pieces and set aside.

Step 2

Clean and chop the shallot. Peel the kiwi, cut one into thick circles, the rest into cubes.

Step 3

Melt 15 g of butter in a saucepan and fry shallots over low heat for 3 minutes. Add kiwi cubes and simmer for 15 minutes.

Step 4

Melt the remaining butter in a frying pan, fry the pork over high heat for 8 minutes. at both sides.

Step 5

In a saucepan with shallots and kiwi, add cream. Cook, stirring, 2 minutes, then beat the mixture with a mixer.

Step 6

Place pork medallions on paper towels and pat dry. Put on a serving dish, drizzle with kiwi cream. Garnish with circles of fresh kiwi, sprinkle with coarsely ground pepper.
