Preheat the oven to 140ºС. Grind almonds in a blender, combine with sugar, sift through a sieve. Add honey, zest, vanillin and lightly beaten protein. Stir until a homogeneous mixture. Sprinkle the working surface with powdered sugar and roll out the almond mass on it into a layer 2 cm thick. Using a knife sprinkled with powdered sugar, cut the almond dough into slices 7 cm long and 4 cm wide. Line a baking sheet with baking paper, grease with butter, put almond ricciarelli. Bake in the oven for 15 minutes, making sure that they do not darken, but remain soft and light. If desired, the finished cookies can be decorated with grated lemon zest and almond petals. Ricciarelli are stored in a closed tin in layers lined with oiled paper. GLOSSARY Richarelli is a type of almond biscuit that is a sweet symbol of the Italian city of Siena.
