Light okroshka with radish, on kefir
For a light okroshka on kefir, you do not have to cook either potatoes or meat. It contains only radish, cucumber, eggs and greens. This okroshka is indispensable on hot days, when even the thought of turning on the stove discourages any desire to eat.
How to cook Light okroshka with radish, on kefir
Step 1
Cucumbers, if desired, peel, cut into cubes of 6-7 mm. Also cut the radish, mix with cucumbers. Salt a little and leave, let them give juice - 10-15 minutes.
Step 2
Hard boil eggs, 9 minutes. Cool under running cold water, peel, cut in half, remove the yolks. Finely chop the whites.
Step 3
Finely chop the green onion and put in a container where you will make okroshka. Salt, add the yolks and grind with a pestle into a paste. Pour some of the kefir and mix thoroughly.
Step 4
Add cucumbers and radishes along with juice to the resulting mixture, put chopped squirrels, pepper, dilute with the remaining kefir. Place in the refrigerator to infuse for at least 1 hour, preferably 4 hours. Serve the okroshka very cold.
