Fried smelt
Description
Fried smelt is the perfect appetizer or main meal. The dish is quick and very easy to prepare / It is insanely tasty and will suit everyone. But only if you have very fresh fish. Here freshness is the only and main criterion of taste.
Cooking
Step 1
Mix in a large bowl - not deep, but not completely flat - about 1 cup of flour with salt and pepper to taste. Salt should be at least 1 tsp, and pepper, in principle, can not be put at all.
Step 2
Place a large heavy-bottomed skillet or two smaller skillets over medium-high heat.
Step 3
Put oil in the pan - it should be enough to make a layer at least 5 mm deep, a little more is better.
Step 4
While the oil is heating (and it should be quite hot), roll each fish in the flour mixture. Put the boned fish on the edge of the plate. If there is not enough flour, add more.
Step 5
Place the fish in the hot oil, shaking off excess flour so that it does not burn in the oil, and fry for about 5 minutes, turning once. Serve immediately, with lemon if desired.
