How to cook Curry with lima beans (simplified version)

Step 1

Soak beans in advance for 3-4 hours, then cook until tender.

Step 2

Cut the onion arbitrarily, not very large. Heat oil in a deep frying pan, add spices, stir, warm. Add the onion to the spices, stirring as well, fry for 5 minutes, until soft. Add tomato paste, fry for a couple of minutes, add water, simmer for another 5 minutes. Add salt to taste. Pour in coconut milk, heat through.

Step 3

Then add beans and chopped sun-dried tomatoes, if desired - chili. Simmer for a couple of minutes, cover and turn off. Sprinkle with cilantro when serving.
