Cauliflower and feta latkes with sour cream

Step 1
Preheat the oven to 200°C. Place the cauliflower on a large foil-lined baking sheet, then drizzle with olive oil and season with salt and pepper. Place in the oven and bake for 15-20 minutes until the cauliflower is done and starts to brown around the edges. Remove the cauliflower from the oven, then mash with a potato masher to the size of a corn kernel. Let her cool down a bit.
Step 2
In a large bowl, whisk together the eggs, flour and milk, then stir in the feta cheese, garlic, parsley and cauliflower. Season to taste.
Step 3
Heat a large skillet over medium heat. Add a little oil and fry about a tablespoon of the mass until golden brown and cooked on both sides. Serve with lemon wedges and sour cream.
