Step 1

Peel the onion and cut into small cubes. Cut the bacon into small pieces. Heat 1 tbsp in a deep frying pan. l. olive oil and fry the onion and bacon over medium heat until golden brown. With a slotted spoon, transfer the onion and bacon to a plate, keeping the fat in the skillet. Cut the chicken into portions. In a bowl, mix flour, salt, hot and sweet paprika. Dip the chicken pieces in this mixture and place in the pan. Fry until golden brown on each side. Then pour in the broth, cover with a lid and cook over low heat for 45 minutes.

Prepare the sauce. Melt butter in a saucepan and add flour. Whisking all the time, gradually pour in the broth. Bring the sauce to a boil and cook for 3-4 minutes, until thickened, stirring constantly. Slowly pour the milk into the sauce and add the hot and sweet paprika. Remove sauce from heat and let sit for 5 minutes.

Add sour cream and onions with bacon. You should end up with a thick, rich flavored sauce. Pour the sauce into the pan with the chicken and simmer over low heat for 10 minutes.

To prepare the dumplings, place a large pot of water on the fire and bring to a boil. Mix flour, chopped parsley and salt. Whisk the egg and 1 cup of water in a small bowl. Pour the egg mixture into the flour mixture and knead into a thick dough. Rinse the spoon in cold water and scoop out about 1/2 tsp. test. Dip in boiling water near the side of the pan.

After the dumplings rise to the surface of the water, cook them for 5-8 minutes until they are soft. Transfer them with a slotted spoon to a colander, shake off the water and place in a bowl. Add some olive oil and keep warm. Arrange the dumplings on a warmed platter, lay out the chicken pieces and pour over the sauce. Serve immediately.
