Baked salmon with grapefruit salad

Step 1
Cut the skin off the grapefruits so that the flesh is visible. Cut the fillets into slices between the films, cut each in half. Keep all the juice that comes out.
Step 2
Toss fillets with thinly sliced red chili and mint leaves, drizzle with Thai fish sauce and season with black pepper.
Step 3
Cut the salmon fillet into 4 equal pieces, sprinkle with grapefruit juice, salt and pepper.
Step 4
Place on a baking sheet lined with parchment and place in a preheated oven under a hot grill for 10-12 minutes. Serve immediately with salad.
