Azu with pickles
Beef azu with pickles turns out especially tender and juicy. Meat cooked in an acidic environment becomes very soft - literally crumbles into small fibers, melts in the mouth. According to the classic Tatar recipe, beef is fried with vegetables and stewed in a thick tomato sauce. For azu with pickles, it is better to take chilled beef tenderloin and homemade pickled cucumbers.
