Rhubarb Salad with Cucumbers
Delicious rhubarb salad with cucumbers and a dressing of orange juice and zest, honey, mustard and olive oil. The recipe will find a worthy place in the menu of people adhering to proper nutrition. The main thing is not to miss the season of fresh, young rhubarb.
Ingredients
Servings 4- 300 g rhubarb
- 4 medium cucumbers
- 1 tsp mustard with seeds
- 2 h. l. Teddy bear
- juice of half a lemon
- 3 Art. l. olive oil
- salt
- freshly ground black pepper
- zest of 1/2 lemon
- 2 sprigs tarragon or purple basil
Cooking
Step 1
Use a paring knife to remove tough fibers from the outside of the rhubarb stem. Slice the stem crosswise into thin slices.
Step 2
Peel the cucumbers (if necessary) and cut them into thin slices.
Step 3
If you decide to add greens to the salad, then separate the leaves from the stems and chop them finely.
Step 4
Mix lemon zest and juice with honey, add mustard and olive oil, salt and pepper the dressing.
Step 5
Mix cucumbers and rhubarb with herbs and dressing, let it brew for 10 minutes. and serve.
