How to cook Yeast cake
Step 1
For dough, grind the yeast in milk, add sugar, flour and put it on the rise to the cap.
Step 2
Separately, prepare the baking: add sugar, vanilla sugar, salt to the soft butter, beat everything with a whisk and add the yolks and eggs, one at a time, kneading well after each. Add lemon zest, lemon juice, cognac, nutmeg.
Step 3
Pour the muffin into the approached dough and begin to gradually add flour. We knead the dough for a long time until it starts to stick out of the hands (15 minutes), to make it easier to knead, we grease our hands with vegetable oil. At the end of the batch, add raisins, dried cranberries and dried cherries (everything is soaked in cognac and sprinkled with flour) and candied fruit. The dough should be soft and elastic.
Step 4
Let the dough rise 2 times. Then we put it in the molds by 1/3 and already in the mold we give it a good rise (almost to the edges of the mold). Bake at 180 degrees for about 40 minutes until a dry splinter. Decorate with icing: beat egg whites with powdered sugar and add lemon juice. Christ is Risen!
