How to cook Sterlet ear
Step 1
Clean the sterlet, gut it.
Step 2
Pour 2.5 liters of water over the chicken, bring to a boil, cook for 30 minutes.
Step 3
Fish trifles, without peeling, wrap in cheesecloth, add to chicken broth and cook all together for another 10 minutes. Remove chicken and fish, strain the broth, salt.
Step 4
Peel vegetables, finely chop. Heat the oil in a frying pan, fry the vegetables for 3 minutes. and add to broth.
Step 5
Cut the sterlet into portions, dip into the prepared broth and cook for 5 minutes. Before the end, pour vodka into the broth.
Step 6
Arrange the pieces of sterlet on plates, pour over the broth.
