How to cook Steam roll (khanum) with potatoes and pumpkin
Step 1
Mix flour, water, oil, vinegar and salt into a soft dough. Cover with a towel and leave on the kitchen counter for 30 minutes.
Step 2
Finely chop the green onion and fry in half the vegetable oil until soft.
Step 3
Cut the potatoes and pumpkin into cubes with a side of no more than 0.5 cm. Place in a bowl, pour over the remaining oil, season with salt, pepper, cumin and coriander. Stir.
Step 4
Roll out the dough into a thin, almost transparent layer. Stepping back from the edge of the dough by 4-5 cm, put the green onions along with the oil. Spread the potatoes and pumpkin over the onions. Roll the dough into a tight roll.
Step 5
Lubricate the steamer insert with vegetable oil, transfer the roll and steam for 35-40 minutes.
Step 6
Prepare the sauce. Free the tomatoes from the skin and finely chop. Place in a saucepan along with juice and olive oil. Simmer uncovered for 5-7 minutes after boiling until the sauce thickens.
Step 7
Season the sauce with chopped garlic, chopped parsley and cilantro. Bring to a boil and immediately remove from heat.
Step 8
Cut the roll into portions and serve with hot sauce.
