Pancakes "Three cheeses" from Viktor Apasiev

Step 1

Prepare pancakes. Beat eggs with sugar and salt, add milk and vegetable oil: mix. Add sifted flour, mix well. Heat a frying pan, lightly grease with frying oil and bake pancakes on both sides until golden brown.

Step 2

Prepare the filling. Whisk the egg until fluffy with the melted butter. Add salt, pepper and some olive oil. Mix all the cheeses, previously grated, and add the egg mixture to them. Add some dried garlic and fresh thyme. Stuff pancakes with this filling at the rate of 50 g of filling in each pancake.

Step 3

Next, grease each pancake with butter and bake in the oven until golden brown.

1 liter of milk
5 eggs
6 g of salt
30 g sugar
400 g flour
40 g vegetable oil
Vegetable oil for frying
50 g gorgonzola
100 g pizza mozzarella
100 g cheddar
1 egg
10 g olive oil
40 g butter
1 g dry garlic
1 g fresh thyme
