Mushroom soup

Description

There are many recipes for mushroom soups. Many of them are long and difficult to prepare. We offer one of the simplest and most proven, and it will take a little time to cook directly.

Cooking

Step 1

The night before, soak the beans in cold water for 6-8 hours. Rinse the mushrooms thoroughly and soak them too - 2 hours before cooking.

Step 2

Finely chop the onion and fry in vegetable oil for 5 minutes. Then add thinly sliced carrots to it and fry for another 5-10 minutes. Bring the broth to a boil and add mushrooms to it. Pour in the water in which they were soaked.

Step 3

Rinse the beans and add to the mushrooms. Cook over low heat for 15 minutes, then add the onions, carrots and diced potatoes.

Step 4

Cook for another 10 minutes, salt, pepper, pour finely chopped greens and immediately remove from heat. Cover with something warm and let it brew for at least 1 hour.

100 g red beans
50 g dried porcini mushrooms
75 g onion
30 g vegetable oil
75 g of carrots
2 l chicken broth
100 g potatoes
salt pepper
green cilantro and parsley
