For this dessert, the most ordinary moss is suitable. Just don't pick it up near roads.
Ingredients
Servings 2- reindeer moss
- 200 g raspberries
- 100 g sugar
- 50 g of glucose
- 1 liter of water
- 100 g of chocolate 82%
- 100 g cocoa butter
Cooking
Step 1
Clean the moss. Blanch with vinegar to remove all impurities, 30 sec.
Step 2
Prepare sugar syrup. Pour moss syrup over, bring to a boil. Dry the moss.
Step 3
Melt chocolate in a water bath and add cocoa butter. Dip moss in chocolate syrup. Dry.
Step 4
Mash the raspberries to a puree state, leave 5 berries for decoration.
Step 5
Put the moss on a plate. Garnish with raspberries and raspberry puree
