Fluffy pancakes with apples

Lush pancakes with apples are an original dish, even a little festive. And it's all thanks to fruit! These pancakes can be served for lunch on Saturday or Sunday, or they can be prepared for the arrival of friends. Well, on Maslenitsa, as they say, it’s just a sin not to bake them! Apples in this recipe are easily replaced with other fruits - pears, bananas or even pineapples. It also turns out very well! But we still like the classic version: in the taste of lush fritters with apples, a moderate pleasant sourness is felt - noble and unobtrusive.

Ingredients

Servings 4
  • 350 g flour
  • 12 g fresh pressed or 6 g dry yeast
  • 250 ml milk
  • 2 eggs
  • 2–3 st. l. Sahara
  • 3 art. l. vegetable oil
  • 0.7 h. l. year
  • vegetable or ghee for frying, honey or jam for serving
  • 2 large green apples

Cooking

Step 1

Prepare the dough for lush fritters with apples. Mix half of the milk and 100 ml of hot water with 1 tsp. sugar, 2 tbsp. l. flour, a pinch of salt and yeast until smooth. Place in a warm place to form a yeast cap, 30 minutes.

Step 2

Sift the remaining flour into the egg mixture, mix. Pour in the yeast mixture, stir until smooth.

Step 3

Peel and grate the apples on a coarse grater. Add apples and butter to the dough, mix. Cover the bowl with cling film and leave in a warm place to rise for 1 hour.

Step 4

Heat a cast-iron skillet to high heat, lightly grease with oil, spread the dough with a tablespoon without stirring it. Bake pancakes with apples over medium heat. Put the finished ones in a bowl or pan under the lid. Serve hot with honey or jam.
