How to cook Zucchini with tomatoes, cheese and breadcrumbs baked in the oven

Step 1

Prepare the zucchini. Wash them and pat dry with paper towels. Then cut each one in half lengthwise. Some of the pulp can be removed to make a small indentation.

Step 2

Crush the garlic with the flat side of a knife and chop. Mix with 2 tbsp. l. vegetable oil, lemon juice, salt and pepper to taste. Lay the zucchini on a plate or cutting board. Pour the resulting fragrant oil and leave for 15 minutes.

Step 3

Peel and chop the onion for the zucchini filling. Cut the bacon into small cubes. Heat the remaining oil in a skillet. Fry the onion until golden brown. Add bacon. Stirring, fry over high heat until golden brown.

Step 4

Crumble fresh bread. Melt butter in a skillet with bacon and onion. Add zest and breadcrumbs, then chopped herbs. Fry over medium heat until golden brown.

Step 5

Heat the oven to 200°C. Place the zucchini halves on a baking sheet or in a dish with the cut side up. Bake for about 7 minutes. While the zucchini is cooking, wash the tomatoes and cut into thin slices.

Step 6

Divide half of the bacon crumb mixture over the zucchini halves. Then lay out the tomato slices. Cover with the remaining breadcrumbs. Bake in the oven for 5 minutes. Sprinkle with cheese and bake for 3 more minutes.
