Strawberry vinegar

Prepare vinegar from overripe but not spoiled berries. It keeps well and will decorate green salads and lean meat dishes. To make salad dressing, mix 1 part (by volume) vinegar with 3 parts good olive oil and season with salt and pepper to taste.
How to cook Strawberry vinegar
Step 1
Wash the strawberries, peel and cut into cubes with a side of 1 cm. Place in a bowl.
Step 2
Pour vinegar over strawberries and leave in a warm place for 2-3 hours.
Step 3
Transfer the contents of the bowl to a saucepan, add sugar, bring to a boil. Reduce heat and simmer on low heat for 10 minutes.
Step 4
Strain the vinegar through a fine sieve, pour into bottles, refrigerate. Store in a dark place.
