How to cook Greek beans

Step 1

Soak beans for 8 hours in cold water, then pour fresh water and boil until tender; put in a colander, let drain all the water. Put the beans in a bowl, drizzle with olive oil, add oregano, mix, bake in an oven preheated to 200ºС for 10 minutes. Meanwhile, peel and chop the onion, fry in vegetable oil until transparent. Add tomato paste, mashed tomato pulp, finely chopped parsley and ground paprika. Bring to a boil, remove from heat. Add baked beans, season to taste with salt and red hot pepper, mix. Allow to cool to room temperature, transfer to a platter and serve.
