Cold tomato soup Kuksi with shrimps

Sergey Batukov, the chef of the Valenok restaurant, prepares cold tomato soup kuksi in four different variations: with noodles, with shrimp, with veal or with crab. This one is with shrimp.

How to cook Cold tomato soup Kuksi with shrimps

Step 1

Blanch the tomatoes and remove the skin.

Step 2

Grind tomatoes in a blender. Add half of the water. Then - salt, pepper, vinegar, soy sauce, sugar, pre-fried garlic.

Step 3

Add fresh cucumbers, radishes and celery, grated on a fine grater. Mix everything.

Step 4

Let it brew for 3-4 hours.

Step 5

Boil the noodles according to package instructions. Boil shrimp until fully cooked. Cool everything down. Clean the shrimp. Rinse the noodles, if desired.

Step 6

Put noodles in a deep plate, add tomato soup, shrimp on top. Drizzle with olive oil and garnish with cilantro leaves. Serve right away.
