Cabbage pie with kefir

Kefir pie with vegetables and sausages is a great idea for a weekend breakfast or afternoon snack. You can serve it with sour cream or unsweetened classic yogurt, fresh vegetables and herbs. The dish is filling and very tasty.

How to cook Cabbage pie with kefir

Step 1

Heat sunflower oil in a deep frying pan, put the onion in it. It must be fried on a moderate heat for 2-3 minutes, stirring constantly.

Step 2

Wash the carrots, peel and grate on a coarse grater, add to the onion, stir, reduce the heat slightly, continue frying the vegetables for another 3-4 minutes. Wash the cabbage, first shred into strips, then cut into cubes. Add it to the vegetables in the frying pan. Mix and simmer for 10-15 minutes until the cabbage becomes soft.

Step 3

Add spices: salt, ground black pepper, paprika, dried garlic and soy sauce. Add diced sausage to the stewed vegetable mixture, mix everything again and stew the whole filling for 4-5 minutes, then let it cool at room temperature.

Step 4

While the vegetable mince is cooling, prepare the dough for the pie. Take a deep bowl, be sure to sift the required amount of flour, add baking powder and mix. The kefir for this pie must be warm, so warm it up slightly (to about 50 °C).

Step 5

Add a room temperature egg to warm kefir and beat everything until smooth using any convenient method, add salt and sugar and mix. Add flour to the kefir-egg mixture, mix until all the flour is incorporated into the liquid, then pour in vegetable oil and mix everything again.

Step 6

Knead the dough. It should be elastic but soft, almost not sticking to your hands. Prepare a work surface for rolling out the dough, sprinkle it with flour and roll out a thin layer of dough into a rectangle. Take the butter out of the refrigerator in advance so that it melts at room temperature. Grease the crust with it.

Step 7

Place a wide strip of cabbage filling in the middle of the crust, roll up the roll. Make small parallel longitudinal cuts on top, pinch the edges. Transfer the workpiece to a baking sheet, brush with beaten yolk, bake in an oven preheated to 180 °C for about 30-50 minutes until golden brown. Baking time depends on the power of the oven.
