How to cook Broccoli penne with leek sauce

Step 1

1. Cut the ham into thin strips. Wash broccoli and cut into small florets. Wash the leek, cut the white part into thin rings. 2. Heat olive oil and butter in a frying pan, fry the leek, 1 minute. Add ham strips; cook 2 minutes. 3. Pour in milk, salt and pepper to taste. Cook over medium heat without lid for 10 minutes. 4. When the sauce has reduced, add the broccoli florets and cook for another 4 minutes. 5. Pour in the wine and continue to simmer the sauce over medium heat until reduced by half, 6 to 7 minutes. 6. Boil water in a large saucepan, add a handful of coarse salt. Put penne. Cook over medium heat, stirring occasionally, until almost cooked through, about 8 minutes. Drain in a colander, shake a few times to get rid of the remaining water. Return the penne to the pot, add the prepared sauce, stir and heat for 1-2 minutes. Divide the penne among bowls and sprinkle with grated parmesan.
