Salad with mango and shrimps

Salad with mango and shrimp surprises with an original combination of exotic fruit, seafood and spicy arugula. Such a dish can be served on the festive table of the highest level and no doubt of success, even if your guests are seasoned gourmets. We recommend using tiger prawns: they will not only make the salad more expressive, but also provide an interesting texture. When choosing an arugula, be sure to smell it. If the aroma is bright, rich - buy: this is what you need for a salad.

Ingredients

Servings 2-3
  • tiger prawns - 300 g
  • mango pulp - 200 g
  • arugula - 100 g
  • mozzarella - 100 g
  • salt - to taste
  • extra virgin olive oil - 3 tbsp. l.
  • grainy mustard - 2 tbsp. l.
  • honey - 1 tsp.
  • salt - to taste

Cooking

Step 1

Prepare salad ingredients. Bring water to a boil in a large saucepan and salt it. Dip the shrimp in it. Bring to a boil again. Boil for 5 minutes and drain in a colander.

Step 2

Cut the mango pulp into small cubes. Rinse the arugula under running water and dry well on a paper towel. Cut mozzarella into small cubes.

Step 3

Prepare salad dressing. Whisk olive oil lightly with mustard, honey and salt to taste. Put arugula in a salad bowl, then mango, shrimp and mozzarella. Drizzle with dressing and serve.
