Royal pancakes
Royal pancakes differ from ordinary ones not only in their original taste, but also in their special texture: they are drier and less plastic. However, therein lies the beauty! In addition, the dough contains a large amount of oil, which makes their taste creamy, very tender. And to further emphasize the “status” of such pancakes, we have added orange extract to the list of ingredients, which provides the dish with an exquisite flavor. That is, it’s definitely worth trying royal pancakes - on Maslenitsa or just on any day when you want to forget about the diet and treat yourself to a truly royal treat.
Ingredients
- butter - 50 g
- yolks - 3 pcs.
- sugar - 1 tsp. l.
- flour - 150 g
- 3 h. l. Sahara
- orange extract - 1/2 tsp.
- proteins - 1 pc.
- vegetable oil for frying - to taste
- milk - 950 g
Cooking
Step 1
Prepare the dough for royal pancakes. Cut the butter into small cubes and melt over low heat. Let cool to room temperature and pour into a mixing bowl.
Step 2
Add the yolks and sugar to the melted butter. Place the bowl in a large container with ice and shake until a frothy mass of a homogeneous consistency is obtained.
Step 3
Sift flour for pancake dough through a fine sieve into a small saucepan. While stirring with a whisk, pour in 500 g of milk, trying not to form lumps. Put on medium heat. Bring to a boil, stirring constantly with a whisk.
Step 4
Remove flour mixture from heat and let cool. Add the yolk-butter mixture, orange extract and 450 g milk. Beat thoroughly with a mixer whisk.
Step 5
Separately, beat egg whites with a mixer until soft peaks. Add to batter and mix quickly. Put a heavy (preferably cast iron) pan on the fire and heat it up.
Step 6
Lubricate it with oil with a brush and pour a small amount of dough. Brown the pancakes on one side, then flip with a spatula and fry on the other. Also bake pancakes from the remaining dough.
