Corn and Crab Soup

Ingredients

  • 2 tsp finely chopped fresh ginger
  • 300 g ice cream or fresh corn kernels
  • sugar - 1 tsp.
  • 175 g crab meat
  • 1 liter chicken broth
  • 2 tsp corn starch, diluted 2 tsp. warm water
  • egg white
  • sesame oil
  • 1 Art. l. dry sherry or rice wine
  • fine sea salt

Cooking

Step 1

Mix protein with sesame oil.

Step 2

Bring the broth to a boil, add the corn and cook over low heat without a lid for 15 minutes.

Step 3

Add wine, ginger, salt, sugar and starch mixture. Bring to a boil again, reduce heat to low. Add crab meat and slowly, stirring constantly, pour in the protein mixture with sesame oil.

Step 4

Serve in small bowls, sprinkled with green onions.
