Cold apple soup
Instead of ham, you can put shrimp in this soup. And you can cook the absolute
but a vegetarian dish, adding radishes and tomatoes.
Ingredients
Servings 4 servings- powdered sugar - 2 tbsp. l.
- large lemon - half
- salt - to taste
- 4 cucumbers 7–8 cm long
- 2 summer apples
- 200 g lean ham
- 400 ml apple juice
- 200 ml natural yoghurt
- 100 ml cream with 33% fat
- egg - 4 pcs
- 2 tbsp. l. mint greens
Cooking
Step 1
1. Wash cucumbers and apples, peel; remove seeds from apples. Grate cucumbers and apples on a coarse grater, sprinkle generously with lemon juice, sprinkle with powdered sugar and mix; put in a bowl. Pour in apple juice and yogurt. 2. Hard boil eggs, peel and chop coarsely. Cut the ham into thin strips. Wash the mint and chop finely. 3. Whip the cream, carefully add it to the soup. Add eggs, ham and mint, salt to taste. Mix and refrigerate for 1 hour. Tip Instead of ham, you can put shrimp in this soup. And you can cook a completely vegetarian version by adding radishes and tomatoes.
