Mushroom chorba with beans
Description
This is a Romanian recipe, and in Romania any soup is called chorba. Therefore, it is quite possible to write that this is the usual mushroom soup, only with beans.
Cooking
Step 1
I took the beans ready in a jar, you can use dry beans. Then we wash 200 g of beans and soak in cold water for 2-3 hours, preferably at night. Then boil the beans until half cooked and drain the water.
Step 2
If you use dry mushrooms, then put them in a bowl, rinse and pour hot water, leave to brew. When the mushrooms are infused, put a pot of water on the stove, put the mushrooms together with the water in which they were soaked, add the bay leaf and boil until tender.
Step 3
Peel and cut carrots and onions, onion-half rings, carrot-straws. Wash sweet pepper, remove seeds and partitions, cut into strips.
Step 4
Heat the vegetable oil in a frying pan, spread the onion and fry for 3-4 minutes. Then add carrots, tomato paste, pepper and diced tomato (previously remove the skin). We fry everything together.
Step 5
We put the mushroom broth on the fire, add the beans and cook for about 10-15 minutes. Then we put vegetables with tomato paste in the soup. Salt and pepper to taste, cook for another 10 minutes. Turn off and leave the soup to brew. Before serving, add chopped greens and sour cream.
