Step 1

We take the meat out of the package and let it "breathe" for an hour without a refrigerator. We also take out the butter from the refrigerator, it should become absolutely soft.

While we make fragrant oil. We take our "thawed" butter and store it in a bowl. Let's pickle the onion. We cut it very finely.

Pour hot water and vinegar into a bowl, add sugar and 1/2 tsp. salt. Let's mix. Let's send an onion there. My thyme ... and cut off its leaves in oil. We filter the onion through a sieve and send it to the oil. Add a pinch of salt. Knead the mass with a spatula until smooth. We cool.

Step 5

After the marinating time, we heat the grill pan and put our steaks. Fry for 2 minutes on each side, then rotate the meat 90 degrees in the same plane (do not flip) to make a lattice pattern on the meat.

Step 6

When we turn the steaks over, put a piece of butter on each (I cut the pieces in half). Fry also - 2 minutes, turn, 2 minutes. Then remove to a plate with the "oil" side down, and freshly fried up and again put a circle of butter on each steak. Cover with a lid and let the steak 10 minutes. "relax".
