Ingredients
Servings 10- small zucchini 5 pcs.
- medium tomatoes 5 pcs.
- Yalta onion or any sweet 1 pc.
- garlic 5-6 pcs.
- balsamic vinegar 2 tbsp
- tomato juice 4 tbsp
- salt 1 pinch(s)
- freshly ground black pepper 1 pinch(s)
- olive oil 3 tbsp
Cooking
Step 1
Prepare vegetables. Peel the zucchini, cut into small cubes. Finely chop garlic, onion. Cut the tomatoes, pour boiling water, peel and chop into small cubes. Pour tomatoes with tomato juice. Leave to marinate for a few minutes.
Step 2
Saute garlic and onion in olive oil.
Step 3
Add tomatoes with juice. Stew for 10 minutes. Next - zucchini. Simmer with open lid.
Step 4
Salt at this stage. Cover everything with a lid, stir and simmer for 25 minutes.
Step 5
After 15 min. mix everything and add vinegar and pepper.
Step 6
If you want a thicker consistency, then simmer for another 10 minutes with the lid open.
Step 7
Then let cool and put in the fridge overnight. When serving, decorate with your favorite herbs. Enjoy your meal!
