Lean Shchi from spinach with porcini mushrooms
Soup recipe from the Lenten menu of the Funny Cabany restaurant
Ingredients
Servings 1- Spinach soup - base - 200 gr.
- Soy sour cream - 30 gr.
- Vegetable oil - 2 gr.
- Peeled potatoes. - 300 gr.
- Mushroom broth - 1.5 l.
- Spinach - 350 gr.
- Salt - 4 gr.
- Lemon juice - 3 ml.
- Ground black pepper peas - 1 gr.
- White mushrooms - 200 gr.
- Shallot garlic - 100 g.
- Cleaned carrots. - 200 gr.
Cooking
Step 1
Method of preparing the broth: dry white mushrooms (100 gr.), Pour drinking water (3 l.) And cook for about 4 hours.
Step 2
How to cook soup: cut potatoes, porcini mushrooms, carrots, shallots into cubes, fry in vegetable oil.
Step 3
Then add mushroom broth, lemon juice, salt, pepper and boil until tender.
Step 4
Add spinach, and optional soy sour cream.
