Shashlik with shrimps and pineapple
Recipe for men. Have you done something wrong and she still refuses to talk to you? Prepare this gourmet dish and your reconciliation will begin with a sincere: "Thank you, it was great!"
Ingredients
- 12 large shrimp
- half a lemon
- half a head of garlic
- salt
- 1 fresh pineapple
- For garnish :
- eggplant - 1 pc.
- For coconut sauce :
- 3 bell peppers (red, yellow, orange)
- For barbecue :
- 6 Art. l. olive oil
- 1 large white onion
- young zucchini - 1
- butter - 1 tbsp. l.
- 8–10 st. l. fish or chicken broth
- 6 sprigs thyme
- 4–8 art. l. coconut puree or coconut milk
- 100 g fresh ginger
- 3 sprigs of cilantro
- 2 tbsp. l. roasted chopped peanuts
Cooking
Step 1
Peel the shrimp from the shell (leave the tails). Sprinkle with garlic, peeled ginger and thyme sprigs. Pour the marinade of olive oil mixed with lemon juice so that it covers the shrimp. Place in the refrigerator for 2-3 hours. Pepper, white onion, zucchini and eggplant cut into flat pieces along the peel so that you get the same multi-colored squares 2 by 2 cm. Put a piece of oil on a preheated pan, pour all the vegetables at the same time and fry, constantly shaking the pan. Salt, pepper, add broth. Finely chop the cilantro just before adding it to the broth to preserve the vitamins, flavor and color. When the broth begins to thicken, remove the vegetables from the heat and arrange on a dish, matching the colors of the squares. Salt and pepper the prepared marinated shrimp and string them on skewers, alternating with slices of fresh pineapple. Sprinkle with ginger chips and fry on both sides in butter. At the end of frying, add cilantro. Put the finished kebab on paper so that excess fat is absorbed, then transfer to a dish with vegetables. Serve with sauce. For the sauce, combine mashed coconut (available in Chinese stores), salt, pepper and roasted chopped peanuts.
