Rye pancakes with orange mousse and waffle crumbs from Alexey Besedin

Step 1

Prepare pancakes. First mix all liquid ingredients, then add flour. Stir until a homogeneous dough is formed. Bake pancakes in a well-heated pan.

Step 2

Prepare the filling by mixing cream cheese with orange jam.

Step 3

Spread the filling on 2 pancakes, roll up. Cut each pancake in half, dip the open ends in the waffle crumbs. Put on a plate and decorate with berry sauce.

1 liter of milk
50 g melted butter
15 g of salt
40 g sugar
200 g rye flour
10 g kvass wort
2 eggs
640 g curd cheese
120 g orange jam
waffle crumb
berry sauce
mint leaves
