Mint ice cream with chocolate
I really love mint and madly in love with mint ice cream! Therefore, in my experiments on making homemade ice cream, this taste was on the must have list. And, of course, I did it! I share the recipe with you and I hope you enjoy it as much as I do :)
How to cook Mint ice cream with chocolate
Step 1
This amount of ingredients is calculated for an ice cream maker with a bowl of 500 ml and the yield of finished ice cream is about 300 g. The ice cream bowl must be pre-frozen very well (minimum 8-12 hours)
Step 2
Mint leaves must first be separated from the stems, washed and dried.
Step 3
Mix milk and cream together, add half the sugar and mint. On low heat, heat the mixture to a temperature of 90 degrees, without bringing to a boil. Cover the saucepan with a lid and leave the mixture for at least an hour (it is better to leave for 4-5 hours).
Step 4
When the time has passed, we filter the milk through a sieve and carefully squeeze the mint leaves so that they give away the maximum essential oils. Heat the milk mixture again to 90 degrees.
Step 5
At this time, beat the yolks with the remaining sugar and, when the temperature of the milk is 90 degrees, pour it into the whipping yolks in a thin stream. We return the mixture to the saucepan and cook the cream over low heat with constant stirring with a whisk until a temperature of 84 degrees.
Step 6
Cool the cream first to room temperature, then in the refrigerator. I put the bowl at night, but you can also for 4-5 hours. The mixture should be well chilled.
Step 7
We take out the ice cream maker and turn it on, prepare the container for freezing.
Step 8
Finely chop 50 g of chocolate and add to the cold mixture, mix with a whisk.
Step 9
Next, proceed according to the instructions for your ice cream maker. I just transfer the cream into the bowl, the stirrer works all the time. After 10-15 min. The mixture will become very thick - you're done!
Step 10
Turn off the device, transfer the mixture to a container for freezing and put in the refrigerator for at least 8-10 hours.
